Casa Summer 2012: Friends, Fun, and a Baby Celebration!

We just got home after 9 days away, so I'm trying to catch up in order.  Let's go waaayyy back to July (the 26th to be exact)....

My senior year at Hope, I lived in the Spanish house with 7 amazing girls.  No, none of us were exchange students and there wasn't much Spanish speaking going on, but we had our fair share of fun.  And over the course of that year, we learned so much about ourselves, about each other, and about God.  We did everything together and that was the most important part.  These girls are my best friends.  We've all moved on since college, and are now spread out to Iowa, Pennsylvania, Virginia, Chicago, and Michigan, so it's rare that all of us are in one place at the same time.  Well, friends, it just so happened that we were all able to get together for one day - for the first time in four years!

We spent the afternoon at my parent's pool, then headed to Tom and Sarah's house to celebrate Em's baby on the way.  We ended up at our house for dinner and breakfast the next day.  It was fantastic.

Thank you to friends who came from near and far to make this Casa Reunion happen.  I love you all so much!


By the way, if you're ever looking for a fun, different chicken salad, I have just the recipe for you! I've never really liked chicken salad because I'm not a fan of mayo, so when I saw this recipe, I had to try it.  And it went over pretty well.  Here's how I made it:

Chicken Salad with Avocado
1 rotisserie chicken
4 ripe avocados
2 Tbsp lime juice
1/2 tsp salt
1/2 tsp pepper
Squirt of mayo (optional)
4 green onions, chopped
1/4 tsp Beau Monde seasoning
Cilantro (mine was all gone, so I used about 1/2 tsp of coriander seed)


Cut off all the chicken and finely dice or shred it.  In a bowl, mash avocados with lime juice, salt, pepper and seasonings.  Mix in the green onion, mayo, chicken, and cilantro.  Serve on whole wheat pitas.  Enjoy!
